Crock Pot Cooking {wk 2}

What I wanted to make...

Ingredients:
3 pound beef roast
2 (12 ounce) jars chili sauce
2 Tablespoons minced onion
1 teaspoon onion powder
1 teaspoon salt
2 (12 ounce) cans cola (not diet)

Directions:
1. Place roast in crock pot.
2. In a medium bowl, mix the chili sauce, onion, and cola until well combined. Pour sauce over roast in crock pot.
3. Cook on low for 6 to 7 hours, until meat is tender.

What I really made...

BBQ pulled pork.

Pork roast in half an inch of water, a cup of BBQ sauce cooked on low for 6 hours. Yum!
Put on a bulkie roll with cheese and extra BBQ sauce.
Served with baked cinnamon sweet potato cubes {made by my husband}

I cooked up something else this week but it was not in the crock-pot.

 I made some mini corn dog muffins. I found the idea on pinterest {of course}

All you need is:
Mini cupcake pan
pan spray
box of cornbread mix
hot dogs
ketchup {optional}

Then you:
1. mix up the cornbread mix
2. spoon it in the greased up pan- only half way or less because they rise and you'll have a hot dog in there, too!
3. You can cut up the hot dogs into small chunks or buy mini franks... which is what I did.  I stuck the whole mini frank in the middle of each muffin.  A friend suggested, even though they are mini  I cut them in half next time.  I think that would look better, but I like more hot dog with my bread.  I'll try it and see what happens. It's easy enough!
4. put the hot dog in each muffin spot
5. bake at 400 {or whatever your mix tells you} for about 10 minutes
6. Get some ketchup- if you like
7. Serve

SO EASY!
